Elevenses – Episode 6, Alessia Cortesi

Elevenses closes the year 2024 with a highly skilled professional who, while not directly involved in private jets, brings extensive experience in luxury hospitality and valuable food for thoughts.

Alessia is both a chef and a wine sommelier, having spent several decades working as a chef on private yachts and in villas. It’s fascinating to hear Alessia’s insights on luxury, hospitality, and catering to VIP clientele.

She aptly points out that guests on luxury yachts often arrive via private jet, and therefore are the same people. The environment is different, but the needs and some of the dynamics on a luxury yacht reflects the private jet ones.

An added bonus is her key tip for food plating and presentation: she would never part with her spices for anything in the world! She even shared a recipe for glass noodles with matcha tea, and I can’t wait to give it a try!
